FALL 2008 COMMUNITY EDUCATION SCHEDULE Take a look at the classes we offer; there’s something to interest everyone! FALL COOKING CLASSES
08-69: ITALIAN REGIONAL COOKING Enjoy the adventure of exploring authentic Italian food, an expression of cultural heritage and a delight for the senses! We welcome back Chef Tom Marsico as fall cooking instructor. Tom’s rich heritage inspires his traditional and innovative cuisine. His parents were born in Italy and he began his cooking education as a boy when he learned to gather and prepare wild vegetables, fresh fish and seafood. Tom learned to make ragu sauces using wild game and seafood. He attended classes at the Culinary Institute of America (CIA) and was trained in pairing of wines and foods at Kendall Jackson Winery and the CIA. He has prepared sumptuous Italian buffets for many local functions and businesses. Participants will learn proper knife skills, food handling procedures, cooking techniques and authentic Italian recipes. Bring a hearty appetite! Supplies needed: apron, chef’s knife (approx. 7” non-serrated blade), 12”x12” cutting board, pencil, and a place-setting. 08-70: GERMAN CHRISTMAS STOLLEN Stollen is a delicious traditional German Christmas Bread with an interesting history. Class participants will learn to make it (a wonderfully easy non-yeast recipe), try it, and take home a sample loaf along with the recipe. While having fun baking, chatting, and snacking, the instructor discusses German Christmas traditions and customs. This class offers a unique opportunity to begin to experience the spirit of the holiday season while sharing in an enjoyable and educational cooking lesson, whether you are of German origins or not! Registration is limited to 12 participants. Frieda Hirschenberger has been a popular instructor for a variety of ACC programs. Frieda is an accomplished cook and a former student of foreign languages. Her European ancestry and cultural history lend interest and flavor to all her classes. GREEN THUMB GARDENING 08-71: THE AUTUMN GARDEN—Putting your Garden to Bed Be a green-thumb gardener! Plan for a beautiful, bountiful, blooming springtime by taking proper precautions and preparation this fall. Topics included are: preparing perennials; rose care; fall fertilizing; fall mulching, including proper types of mulch; how and when to dig bulbs and store them; and more. Lots of discussion and opportunities for questions and answers with a knowledgable instructor. Randy MacArthur began his career in the landscaping business before opening and operating MacArthur Nursery for 15 years. He taught a variety of gardening classes at the nursery and now brings his experience and knowledge to Community Ed at ACC. 08-72: INSTANT PIANO FOR HOPELESSLY BUSY PEOPLE You don’t need years of lessons to learn to play piano! You can learn enough in this enjoyable workshop to play almost any song on the piano, with two hands. Continue to perfect skills at home using a home-study CD, included with the cost of the class. Learn the system the pros use—chords, not tedious note-reading. Instructor Marc Doiron has a B.A. in music and has played piano professionally for over 15 years. He is versed in pop, rock, country, blues and jazz. The Instant Piano one-day chord workshop has been taken successfully by over 15,000 students across the US since 1982. We are excited that Marc now brings the seminar to Alpena. 08-73: INTRODUCTION TO THE RELIGIOUS TRADITIONS OF THE EAST HINDUISM, BUDDHISM, TAOISM AND ISLAM This four session class explores the historical and literary foundations of the best-known religious traditions from the East. Through storytelling and consideration of the social/historical climate of the time, students gain a working knowledge and appreciation of these faith traditions. The topics are surveyed as follows: Nov. 10 (Hinduism), Nov. 13 (Buddhism), Nov. 17 (Taoism), Nov. 20 (Islam) Instructor Kimberly Beyer-Nelson holds a master’s degree in comparative religion and a graduate certificate in holistic health care, both from Western Michigan University. She attended theological school in Denver and has published magazine articles and books about adult spirituality, yoga therapy and meditation. 08-74: YOGA FOR DEPRESSION — MORE THAN JUST A STRETCH Millions of folks struggle with depression across the United States. While medication and counseling are important when working with this disease, the Hatha Yoga tradition offers comprehensive and integrative wellness techniques to help people better manage depression. The first session touches on the Ayurvedic (medical system of India) model of doshas and koshas and how these maps of our basic constitutions allow depression to be categorized into three distinct sets of depressive symptoms. In the second session, students will practice the breathwork, stretching, and conscious relaxation techniques to work with anxiety, restlessness, fatigue, and the blues. Instructor Kimberly Beyer-Nelson holds a master’s degree in comparative religion and a graduate certificate in holistic health care, both from Western Michigan University. She holds certificates in yoga therapy, cardiac rehab yoga and Reiki. Learn how a vegetarian lifestyle can create a vibrant, youthful, healthy body, mind and spirit. We'll take the mystery out of this healthy way to eat, answer questions and discuss its advantages! She has a passion for sharing her knowledge, relieving mysteries of protein consumption without meat and showing how easy and beneficial it is. "This class is for those who want to take charge of their lives in a positive, efficient, and incredibly effective way. One of the exciting aspects of co-creative science is that everyone actively participates in it. This is a science you must personally apply to your life in order to experience its benefits. It has extraordinary benefits for health and the environment." Machaelle Small Wright Instructor Jan Robarge has studied yoga, meditation, and other subjects with many international experts. She teaches a variety of enlightenment courses and enjoys sharing the journey for knowledge and serenity. BASKET WEAVING Weave two baskets in just two classes! Instructor Diane Kamyszek has been making baskets for over 15 years and teaching for over nine. She is an energetic and bubbly instructor who enjoys sharing her skill and love of this infinitely variable, decorative craft. Classes are limited to ten participants. 08-78: SESSION I teaches basic basket weaving technique for beginners. Through guided hands-on practice, participants will weave an 8” x 11” market basket with a D-handle using flat reed. All materials are provided. This basket makes an ideal Christmas gift, whether you fill it with goodies, or not! Participants learn what constitutes a good quality, durable basket. Participants will weave a round basket with an accent of color which features a unique and sturdy 8-inch solid wooden flat base—perfect for holding bottles and toiletries in the bathroom or bedroom. This is also an ideal basket to use as a gift—or make it as a gift for yourself! All materials are provided. JEWELRY MAKING 08-80: BASIC BEAD STRINGING For beading beginners or those who want additional practice, this class provides tools, techniques and fundamentals of stringing beads into beautiful, unique, personalized creations. The skills learned in this class can be applied in an endless variety of bracelets, necklaces and even earrings that make excellent gifts. If you want to venture into jewelry making without intimidation, try this class. You’ll take home skills and a necklace or bracelet you’ve created yourself. Even if you’ve taken jewelry classes and created pieces of your own, the classes below will add new styles to your jewelry wardrobe and gift-giving ideas. If you’re a beginner, these classes will teach techniques and apply your new skills. 08-81: CHAIN-MAIL JEWELRY Metal jump rings can be joined in a variety of ways to create intricate and beautiful designs using techniques that have been an art form for centuries. Traditionally conjoined links were used to produce ancient armour. In this introductory class participants will create a relatively simple chain mail bracelet in the rosette or love-knot style, with optional charm(s). We’ll also learn some history of the technique and review a few of the infinite possibilities of Chain “maille.” Instructor Kate Bruski demonstrates techniques and materials with many designs as examples. FEE: $20, includes all materials. Wire is an easy multifunctional medium for creating beautiful, professional-looking jewelry. Learning the basics of wire in these two enjoyable sessions will enable you to make complete pieces or add elements to other designs. In the first class learn tools and skills for making components: bead links; jump rings and split rings; wire links; clasps and fasteners; eye pins and head pins; shapes; wrapped beads; ear wires and studs. In the second class apply the skills in your own creation. Instructor Kim Salziger designs wire jewelry because she prefers its elegant, professional results. KNITTING CLASSES Instructor Durenda Pake of Yarns to Go keeps your hands happy this winter creating beautiful items for yourself or as gifts! Choose any class or the whole series. 08-83 : Register for all three classes below for just $50 (plus supplies); saves $10. 08-84: BEGINNER OR NOT SCARF—Whether a beginner or a seasoned knitter, you’ll love this simple project on large needles with various yarns. After knitting, you may leave as-is or work some magic into the piece and produce a wearable piece of art! You decide if you want an indoor or outdoor scarf and we'll assist in selecting the fiber. Samples on display at Yarns to Go. Don’t stop at just one; selecting the yarns is as much fun as completing the final project! No experience necessary. After completing the wool beads we will string them, along with semi-precious stones and beads to create a one-of-a-kind necklace. All supplies included for a $25 fee payable at Yarns to Go. Once you learn this simple technique, you will be able to make several for Christmas gifts. No experience necessary. TRAINING YOUR DOG WITH PSYCHOLOGY All dogs have a desire to please their owners, but have difficulty following the signals we give. Learn how to teach your dog in ways they can understand. Instructor Randy MacArthur has decades of experience with dogs. He has taken many dog-training classes and studied the ideas of The Dog Whisperer. Randy has incorporated these into a philosophy of training that has worked for him, for others, and can work for you and your dog. In this three-week series you will learn techniques for eliminating bad habits and reinforcing good behavior. The first class is instructional; the second night owners will bring in their dogs to work with them. The last night will be review and reinforcement. COMPUTER CLASSES A wide variety of computer topics, designed to fulfill a range of needs are taught through Community Education. Check out the list below; whether you are a computer newcomer or a long-time user who seeks enhanced skills, you can benefit from one of the classes. Each class offers an introduction to a specialized topic and provides the basic tools upon which participants may build proficiency. Instructors Brendan Fleishans, Chris Kao, and Kim Salziger represent an extensive knowledge-base and experience. Their clear, well-paced instruction guides novices through the intricacies of computer technology. Note: lab computers are equipped with the VISTA operating system.

It becomes your typewriter as you create and manipulate work. Learn to navigate the Ribbon to create professional looking documents. 08-99: BASIC COMPUTER SAFETY Instructor: Chris Kao
This class
provides essential information for all computer users. Learn the
importance of privacy and security; online threats such as viruses,
spyware and how they work; how to protect yourself on- and off-line;
and how to develop simple, effective habits to protect yourself and
your computer. Options for free downloads of security software
provided, including anti-virus software and anti-spyware.

PHOTOGRAPHY CLASSES Instructor Tom Sherrill-Mix has been working in photography for 15 years and teaching the subject at ACC for ten. Tom has his own photography business called Third Eye Photography. Please consider registering for both the photography and PhotoShop classes to maximize benefits and skills.
DIGITAL CAMERA PHOTOGRAPHY CLASSES 08-100: BEGINNING DIGITAL PHOTOGRAPHY Learn the basics of how to choose a camera, common camera features and what they do, and what to do with digital pictures. Class also covers some photography basics. You do not need to own a camera to benefit from this class. It is a great class to take if you plan to purchase a camera but don’t know what to get and perfect if you plan to purchase a camera as a gift. 08-103: PHOTOSHOP BASIC This three-week beginner's course covers basic image editing techniques using Adobe Photoshop. Participants will learn to navigate the Photoshop window, use palette controls, archive techniques to preserve picture quality, and resizing pictures. Make your photos look their best and share them in imaginative ways. Great for family events and the holiday season. Combining the PhotoShop class with Community Education Digital Photography, Publisher, or PowerPoint classes can help you to make the most of your photo archives.
